The World's 50 Best Restaurants

· Lima Bevestigd

A travelling awards night for the restaurant industry, staged in a different host city each year and voted on by about a thousand industry panellists.

Datums · Lima BevestigdThe organizer states that the 2026 edition 'will now take place in Lima, Peru, on Wednesday 4 November, following a change to the originally announced host destination of Abu Dhabi,' and that #50BestTalks returns on 3 November. Those two dates bracket the edition here; ticketed 50 Best Signature Sessions at Lima restaurants run around them and their dates had not been published as of early September 2026. No ceremony venue has been named. The programme is staged with PromPerú. The 1-50 reveal is livestreamed on the organizer's YouTube channel. Datum in behandelingThe 2027 host city has not been announced, and neither has a date. The month cannot be estimated with any confidence: the ceremony was held in Turin on Thursday 19 June 2025 and in June in the two years before that, but the 2026 edition moves to 4 November in Lima, so the June pattern is broken. The 1 June 2027 placeholder carries no weight and must be replaced the moment the organizer announces. The host city is also unknown, so the per-edition venue, city, country and coordinates are all null. · Lima VerwachtNot yet announced. Projected from the 2026 dates (November 3–4); the organizer's pattern usually holds.

OrganisatorWilliam Reed, the British publisher that launched the list in its magazine Restaurant; the 2026 edition is staged in partnership with PromPerú, the Trade, Tourism and Investment Commission of Peru · sinds 2002

The list began in 2002 as a feature in the British trade magazine Restaurant and has become the most consequential annual event in the restaurant business. It is produced by William Reed, which owns the brand and the publication, and it takes the form of a voting academy rather than an inspection system: the academy is divided into 27 regions, each with a chair who assembles a panel of forty voters drawn equally from chefs and restaurateurs, food writers and critics, and well-travelled diners. Each panellist casts ten votes for the best meals they have eaten in the previous eighteen months. There are no published criteria. Deloitte adjudicates the count independently, and at least a quarter of each regional panel is replaced annually.

The ceremony travels. The host city is chosen each year, usually with a national or regional tourism body as partner, and the 2026 edition goes to Lima in partnership with PromPerú after an earlier announcement of Abu Dhabi was changed. The evening reveals the 1-50 ranking in reverse order along with individual accolades including the Best Female Chef Award and the Icon Award; the Champions of Change, Art of Hospitality and One To Watch awards and the 51-100 list are published in the weeks beforehand, which is how the organizer sustains attention between announcements.

The ceremony itself is a closed room of nominated restaurants, academy members, sponsors and press. Around it sits a programme that is not: #50BestTalks is a day of public-facing conversation, the 50 Best Signature Sessions put visiting chefs from the list into host-city restaurants on tickets that local and visiting diners can book, and the ranking reveal is livestreamed.

01Waarom het relevant is

A movement of a few places on this list measurably changes a restaurant's booking book, and reaching number one changes its life — which is why the organization introduced the Best of the Best rule in 2019, retiring former winners from the ranking so that the top of the list keeps moving. That the award travels matters almost as much as the award. A host city buys, through its tourism agency, the presence of several hundred of the world's most-photographed chefs and the food press that follows them, and the 2026 choice of Lima after Maido's win in 2025 is the clearest illustration of how the circuit now works: win the award, then host it. In our reading the list's real function is as the restaurant world's annual census — it is where the industry finds out who is ascendant, which is a different question from who is best, and the organization is reasonably candid that a poll of panellists' favourite meals is what it is.

02De week eromheen

The host city does the work. Restaurants on the list send their chefs, sponsors stage dinners, and the local industry opens its kitchens to visitors for a few days around the ceremony — in Lima that is formalized as the ticketed Signature Sessions, where a visiting chef cooks in a local dining room. The practical effect on the host city is a short, intense spike in restaurant demand rather than a street festival: the tables that matter are booked out, the hotels near the ceremony venue fill with delegations, and very little of it is visible to anyone not eating in a restaurant that week.

03Wanneer aan te komen

Two nights before the ceremony if you have a reason to be there, which for most people means a Signature Session booking. The Talks fall the day before the ceremony and the best of the host-city dining happens in the forty-eight hours around it. Anyone coming purely to eat should consider the days immediately after instead, when the visiting chefs have gone and the city's own restaurants are still at full stretch.

04Waar te verblijven

Set by the host city and impossible to generalize. For Lima in 2026 the answer is the Miraflores and Barranco districts along the coast, which hold most of the city's hotels and most of the restaurants on the lists, and San Isidro for the business-hotel end. Book the neighbourhood the ceremony is in, because the host-city traffic on the night is the single biggest practical problem.

05Toegang en hospitality

The ceremony is not sold. Seats go to the ranked and nominated restaurants, the voting academy, the organization's partners and accredited press, and there is no public ticket at any price. Everything else around it is more open than the ceremony suggests: the 1-50 reveal is streamed free on the organizer's YouTube channel, #50BestTalks is programmed as a public-facing session, and the 50 Best Signature Sessions are explicitly ticketed and bookable by both local and visiting diners, with the organizer stating that the line-up is published in advance. Press accreditation runs through the organization's media centre. Commercial involvement is by sponsorship, and the organization states that partners have no part in compiling the results.

06Waar de sociale activiteit plaatsvindt

In restaurants, almost entirely, and in the bars attached to them. The host city's best-known dining rooms and the hotel bars nearest the ceremony carry the days either side; the after-events are private functions of sponsors and of individual restaurants and are not described here. The public face of the week is the Signature Sessions table you can book and the livestream you can watch.

07Hoe u er komt

Commerciële luchtvaartDetermined by the host city. For Lima in 2026, Jorge Chávez International (LIM) is the entry point for all of South America and the long-haul gateway from North America and Europe, about 30 to 50 minutes from Miraflores depending on traffic.
TreinRarely relevant; the host cities chosen so far have been reached by air. Lima has no useful intercity passenger rail.
AutoHost-city dependent. Lima's traffic is the constraint on any evening plan and journeys across the city should be budgeted at double the map estimate on the night of the ceremony.
PrivéluchtvaartHost-city dependent. Lima's business-aviation movements use Jorge Chávez alongside the commercial traffic.

08Praktische informatie

DresscodeCocktail or black tie for the ceremony, which is a televised and heavily photographed room; chefs' whites are a recognized alternative and a number of the ranked kitchens wear them. Everything else around the week is restaurant-appropriate rather than formal.
WeerSet by the host city and date, which both move. Early November in Lima sits at the start of the coastal spring: grey, humid, around 20 degrees Celsius, with the city's characteristic low cloud and almost no rain. No meteorological normals were retrieved for this record.
Verplaatsing ter plaatseHost-city dependent. The recurring practical issue is the evening of the ceremony, when several hundred people move between hotels, the venue and after-events in the same two-hour window; in a city with heavy traffic, such as Lima, that is the detail to plan around.
HotelsThe ceremony creates a short, sharp squeeze on the hotels closest to the venue and on the neighbourhoods with the best restaurants, typically for three or four nights. It is rarely a city-wide sell-out, because the delegation is in the hundreds rather than the tens of thousands.
RestaurantsThe decisive booking problem of the week. Restaurants on the 1-50 and 51-100 lists in the host city are unbookable for several days either side, and those hosting Signature Sessions sell those seats separately and early. Book before the host-city programme is announced if you can; afterward, look one street further out.
ReserveringstimingRestaurant tables in the host city as early as the calendar allows, and certainly before the Signature Sessions line-up is published. Hotels two to three months ahead for the nights around the ceremony. Signature Session seats when the organizer opens them, which it states will be announced in advance.
TicketsThere is no ticket to the awards ceremony; attendance is by invitation and accreditation only. The 1-50 reveal is streamed free. The 50 Best Signature Sessions are ticketed and sold to the public, local and visiting, through the host restaurants and the organizer's channels; no price is quoted here because the 2026 line-up and prices had not been published when this record was written.
HospitalityThe organization sells sponsorship rather than hospitality, and states plainly that partners have no involvement in compiling the results or the awards. There is no delegate or hospitality package a visitor can buy. The host city's tourism agency — PromPerú for 2026 — is a programme partner rather than a ticket seller.

09Geschiedenis

The first list appeared in Restaurant in 2002, with El Bulli at the top; an awards night was added shortly afterward. William Reed extended the franchise into regional rankings — Asia's 50 Best and Latin America's 50 Best from 2013, Middle East & North Africa's from 2022 — and into separate lists for bars, hotels and vineyards. The 2019 rule retiring former number ones into a Best of the Best group was a direct response to criticism that the same restaurants recycled through the top places. The ceremony left London for a rotating international host some years ago, and Turin held the 2025 edition on 19 June. In September 2026 the owner announced that the whole family of rankings would be rebranded as The 50, with the restaurant awards adopting the new identity during the rollout, so the name on the room in Lima may not be the name in this record.

10Wie is er

Chefs and restaurateurs from the ranked and nominated restaurants, with their teams; the voting academy's regional chairs and panellists; food critics, editors and broadcasters; the organization's commercial partners; and the host city's own restaurant industry and tourism agency. The Signature Sessions add paying diners, local and visiting.
